Jack the Horse Tavern -- Tim Oltmans & Micki Schubert's dream has become a reality.

For Tim and Micki, Jack the Horse Tavern is the culmination of more than a decade of studying, planning, dreaming, patience, and just plain hard work. “Every step we’ve taken the last 14 years has been with one goal in mind – to own and operate a great little restaurant with the friendliness of a London pub, the intimacy and sophistication of a French bistro, the food of a first rate New York City restaurant - and have a ton of fun doing it!.”

Originally a mechanical engineer, Tim's life-long love of cooking paved the way to NYC in pursuit of his passion. Graduating first in his class from the French Culinary Institute in 1992, Tim started his cooking career with Jean Louis Dumonet at Trois Jean. Climbing through the ranks in some of NYC’s great restaurants, he worked with such outstanding chefs as Tom Colicchio at Gramercy Tavern, Laurent Tourondel while at C.T., and Floyd Cardoz at Tabla. Now Tim and Micki are ready to share Jack the Horse Tavern with Brooklyn, and the City of New York.

Micki has been the guiding force behind the creation of Jack the Horse Tavern. Her tenacity and unwavering belief in the success of their restaurant kept them firmly on track as their vision slowly took shape. Micki’s background in art and design served well her natural, and remarkable, ability to transform an idea into something real. Working full-time for the last 13 years in a NYC firm of financial advisors, she immersed herself in learning restaurant management and finance, developed her wine knowledge, crafted marketing strategies, hosted corporate dinners – in fact, Micki has doggedly pursued their dream using every source and opportunity she could find.

So, why “Jack the Horse”??? There is a lake in northern Minnesota where Tim, his father and brothers fished for Northern Pike, Walleye and Small Mouth Bass. It was called Jack the Horse Lake – a serene and picturesque place. With those memories came the name - and it doesn’t get sweeter than that!
